Tacoro Tacos & Tequila Opens in Plano’s Assembly Park

Tacoro Tacos & Tequila is serving up elevated Mexican street food and handcrafted cocktails in Plano’s new Assembly Park.

The latest of the Blender Brands concepts anchoring Assembly Park, Tacoro Tacos & Tequila delivers traditional Mexican roots with contemporary technique, serving artfully plated, artisanal tacos, premium tequilas, and cocktails that celebrate both craft and culture. Every detail — from the specialty braised meats to the curated agave selection — is designed to spark connection, conversation, and unforgettable nights.

Tacoro’s menu is curated by Blender Brands Ownership and Chef Ricky Rodriguez, who also crafted the menu at the recently opened Assembly Icehouse. Guests can look forward to a robust menu with festive appetizers like tableside guacamole, a savory ceviche, and a queso blanco made with white cheese, roasted green chili, and a hint of spice. Also available to order are taco plates, featuring three tacos of guest’s choice — including birria, carnitas, barbacoa, and al pastor. Tacoro also offers modern takes on classic dishes, like enchiladas, pozole verde, and quesabirria.

These dishes pair well with Tacoro’s signature cocktails, like the Amor Prohibido — composed of smoky mezcal, peach, hot honey, and tajin — as well as the Tacoro Colada, with white rum, coconut, a house and a house piña reduction.

Tacoro Tacos & Tequila is the final of three Blender Brands concepts to open in Assembly Park. The first of them was Cliff Coffee, and second, Assembly Icehouse. All three concepts are connected under one roof, sharing a kitchen but offering completely different atmospheres. Guests will be able to walk from one space to the next showcasing themed murals by local artist Michael McPheeters, transitioning from the desert lounge feel of Cliff Coffee to Tacoro’s festive energy to the laid-back Icehouse vibe, a well-rounded addition to Assembly Park.
